Today I will share with you this very simple, healthy recipe to make Healthy Mini Pancakes with Mango Strawberry Salsa and Strawberry Sauce. They are ideal for kids and toddlers because they are sugar free, dairy and gluten free and you can also make them vegan! But, the most important thing is you won’t have to compromise on flavor and taste!

Aah, motherhood…hiding behind a kitchen cabinet to eat a piece of chocolate so your toddler won’t see you. All parents have their weaknesses, I know they do. One of my weaknesses is thin silky crepes with Nutella, bananas, and strawberries or filled with my mom’s homemade Romanian apricot jam. That is not quite the healthiest snack or breakfast of them all, is it? I honestly feel guilty every time I’m making these crepes, because I couldn’t give any to my one and a half year old daughter. Well, actually I didn’t want to give her any! They do have some processed sugar and we’ve been steering clear of that with her until now.

So I came up with this recipe to make her stop staring at my pancakes and start staring at hers! Because you know what? They look equally delicious!

Here is what you will need to make a batch of these bad boys:

Healthy Mini Pancakes

For the pancakes (Makes aprox. 7 mini-pancakes)

  • 1/2 cup oats
  • 1/3 cup soy milk or cow’s milk
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract
  • 1 ripe banana
  • 1 spoon coconut oil/butter (for cooking the pancakes)

Procedure:

  1. Use a food processer to grind the oats into a flour. (You can also buy oats flour from the store but I like making my own)
  2. Add the cinnamon powder to the food processor along and mix
  3. Add the banana cut in large pieces and blend it all in. At this point you will end up with a paste looking mixture.
  4. Mix the milk with the vanilla extract and add it little by little to your food processor until you get a smooth pancake batter
  5. Heat up a pan (preferably non stick) and put some coconut oil or butter( depending if you want to go vegan-dairy free or not)

TIP: If you use a non stick pan you will need no grease at all! This will make the pancakes even healthier, even though I don’t mind some organic extra virgin coconut oil in my baby’s diet. Ikea sells really cheap and good non-stick pans. 🙂

6. Use a spoon to portion your batter and make small pancakes. Wait until they are cooked on the first side to flip them.  Place the pancakes on a wooden chopping board, not a plate once they are cooked to prevent them from getting a raw taste in the middle.

TIP: Because the pancakes are mini, you can cook 3 or even 4 at a time in your pan, making this recipe even less time consuming

Mango Strawberry Salsa

For the mango strawberry salsa:

  • 1 ripe mango
  • 4-5 ripe organic strawberries

Procedure:

  1. Peel and clean your fruit
  2. Cut in into nice small dice
  3. Mix it together in a bowl and set it aside

Strawberry Sauce

For the strawberry dipping sauce:

 

  • 1/2 cup frozen or fresh strawberries
  • 1 spoon honey (optional)

Procedure:

  1. Put your strawberries in a pot on low fire and cook them until they release their liquid (about 10 minutes)
  2. Use a blender to blend the strawberries into a smooth sauce
  3. You can also strain your sauce if you want it smoother, but I usually skip this step because I don’t want to lose any of the fruit’s nutrients
