This easy berry-filled fruit salad is the perfect way to add a little Red, White, and Blue into your patriotic party! The sweet and slightly tart flavors perfectly combines with the delicious flavors of the berries for a quintessential summer treat.

Red, White, and Blueberry Fruit Salad - Wit & WanderWe used a whole coconut, but I’m going to be honest…it was a HUGE pain! It’s not quite as easy as they make it seem on Survivor, ha! I had to call in reinforcements and the hubby tackled it with a saw. It was quite the production. I probably shouldn’t have told you all that, but at least you know I’m honest!

Needless to say, when I make this recipe again, I will choose pre-chopped, shaved, or shredded coconut. If you all have a great, easy way to prepare coconut, let me know in the comments!

Once you wrangle your coconut, the only thing left to do is chop the strawberries and combine all the fruit together with the honey and lime juice. Also as a side note – don’t feed your daughter blueberries right after you squeeze the lime juice or she will make a very sour face and look at you like you tried to personally attack her…not that I know from personal experience…

Ingredients
  1. 1 coconut
  2. 1 pint of blueberries
  3. 1 quart of strawberries
  4. 2 Tablespoons honey
  5. 1 1/2 Tablespoons lime juice (or juice from one lime)
Instructions
  1. Chop coconut and quarter strawberries.
  2. Combine coconut, strawberries, and blueberries in a large bowl.
  3. Add honey and lime juice, mix well.
  4. Serve immediately or refrigerate.
