A couple of weeks ago when I shared my favorite Homemade Taco Seasoning, I’ll admit I was kind of holding out on you. That was actually the first of a two part recipe. Once you have made the taco seasoning and you have it ready in a jar on your kitchen counter, you are ready for my favorite easy weeknight recipe: Crock Pot Chicken Tacos. With that seasoning pre-made, this is a three ingredient recipe that takes about 10 minutes to prep and it is packed with flavor. Without further ado, here is your new favorite recipe!
Add the chicken to a Crock Pot. Sprinkle with 2 Tablespoons of your Homemade Taco Seasoning. (You can use a packet of taco seasoning from the store, but it really is so much more flavorful with the homemade variety.)
Cover with a jar of your favorite salsa.
Cook for 4 hours on high or 8 hours on low. Shred the chicken (either using forks or your stand mixer) and mix with the salsa.
Make your tacos!
One of my favorite parts about this recipe is the leftovers – this chicken is perfect for quesadillas, taco salads, and chicken tortilla soup, which means your family is less likely to get tired of the leftovers. Share in the comments your favorite thing to make with Mexican shredded chicken.

- 3 Chicken Breasts
- 2 Tbsp. Homemade Taco Seasoning (or one Taco Seasoning Packet)
- 1 Jar Salsa
- Place chicken in slow cooker.
- Sprinkle taco seasoning on top and cover with a jar of your favorite salsa. Cook on high for 4 hours or on low for 8 hours.
- Shred the chicken and stir into the salsa.
