Easy “Unfried” Ice Cream Dessert

Gluten Free Unfried Ice Cream - Wit & Wander

You can whip up this Easy Unfried Ice Cream Dessert in less than 10 minutes. It tastes like Mexican Fried Ice Cream, but there’s no frying or baking! It’s gluten free, perfect for a crowd, and absolutely delicious. To make this practically perfect confection, you will need:

  • 4 Cups of Crushed Rice Chex
  • 3/4 Cups Softened Butter
  • 1 1/2 Cups Brown Sugar
  • 1 1/2 Quart Vanilla Ice Cream, Softened
  • Optional: Ice Cream Toppings (Hot Fudge, Caramel, Whipped Cream, etc.)

Set your ice cream out 15 minutes before you begin making your dessert to allow it to soften to a workable temperature. Then start by putting Rice Chex in a ziplock bag and crushing until you have 4 cups of crushed cereal. This is a great way to include little ones! Give them a cup and let them go to work rolling and crushing the cereal. You still want to see some sections of the Chex, so you want it to be crushed, but not completely pulverized.

Soften the butter and mix with the brown sugar. Combine that mixture with the crushed Rice Chex. Spread half the cereal mixture on the bottom of a 9×13 pan.

Carefully spread the ice cream on top of the cereal. I usually plop the ice cream down in big sections then smooth it out with a knife or spatula.

Cover with the remaining cereal mixture and put it in the freezer to harden.

Instructions
  1. Crush Rice Chex until you have 4 Cups of crushed (not pulverized) cereal.
  2. Mix softened butter, brown sugar, and Rice Chex well.
  3. Spread half of the cereal mixture on the bottom of a 9x13 pan.
  4. Spread the ice cream carefully on top of the cereal.
  5. Cover the ice cream with the remaining cereal mixture.
  6. Return to freezer to set up until time to serve.
Notes
  1. Optional: Serve with your favorite ice cream toppings like hot fudge, caramel, or whipped cream.
