Breakfast is one of the hardest meals for us.
I mean, it’s supposed to be the most important meal of the day, but no one has time to really make it.
Cereal?
No.
Yogurt?
Boring.
Fruit?
I mean, if there’s nothing else available.
Every so often I want a giant pancake with sausage drenched in maple syrup.

Doesn’t that sound good to you?
Well, I have come up with the perfect recipe for you! It is quick, flavorful, and something that all kids would eat up!

It’s also easy to take with you on the go, for those days when you’re running a little late for school or work.
Sausage stuffed mini pancakes are cute, fun, and delicious, perfect for your breakfast routine.
Sausage Stuffed Mini Pancakes

It’s so fun to eat, they’ll forget that they don’t like brown things or pancakes.
Ingredients
1 lb Breakfast sausage
1 egg yolk
Pinch of Salt and Pepper
3 tablespoons olive oil
2 cups all-purpose flour
2 teaspoons baking powder
⅓ teaspoon salt
1 tablespoon sugar
½ tablespoon almond extract
2 eggs
1 ½ cups of milk
2 tablespoons of softened butter

Directions
- Mix breakfast sausage, egg yolk, salt and pepper and divide into small meatballs
- Put half of the olive oil in a pan set on a medium heat
- Brown the outside of the sausages, this takes about 5 minutes
- While sausages are browning, mix flour, baking powder, salt, sugar, almond extract, eggs, milk, and butter until there are no lumps in the batter
- Allow sausage to cool a little and pat off excess oil
- Heat the rest of the oil in a pan on a low-medium heat
- Place sausages in the batter and coat well
- 4-6 at a time place into pan
- Brown one side and then flip to brown the other- about 4 minutes each side
- Repeat until finished
- Serve with maple syrup, powdered sugar, or your favorite pancake toppings
